As we celebrate Black History Month, it’s also a time to focus on heart health during American Heart Month—especially for the Black community. The Centers for Disease Control and Prevention (CDC) reports that African Americans have a higher rate of hypertension (high blood pressure), a major risk factor for heart disease. A disproportionate number of Black adults in Detroit suffer from high blood pressure, which is a significant risk factor for heart disease and stroke. According to the Detroit Health Department, cardiovascular diseases, including heart disease and stroke, remain the leading cause of death in the city accounting for nearly 25-30% of all deaths annually. Taking time to exercise, eat a balanced diet, and monitor your health can make a difference. To help you get started on a nutritious path, try this comforting recipe packed with lean protein, fiber, and flavor.
White Chicken Chili
(Makes 6 Servings)
Ingredients
- 1 lb. boneless skinless chicken breast,
cooked and shredded - 1 medium onion, chopped
- 3 cloves garlic, minced
- 2 cans (15 oz each) white beans,
- drained and rinsed
- 1 can (4 oz) diced green chilies
- 2 cups low-sodium chicken broth
- 1 tsp ground cumin
- 1 tsp chili powder
- 1/2 tsp paprika
- Salt and pepper to taste
- 1/2 cup low-fat sour cream
- Fresh cilantro or green onion
- (optional, for garnish)
Instructions In a large pot, sauté onions and garlic until softened over medium heat.
Add the shredded chicken, white beans, chicken broth, and spices (cumin, chili powder, paprika). Stir well to combine.
Bring to a simmer and cook for about 20 minutes, stirring occasionally, then salt and pepper to taste. Stir in sour cream. Serve hot, garnished with fresh cilantro or green onions.
VARIATIONS Add jalapenos, cayenne pepper and/or green chiles for a spicy chili. Try coconut cream and/or plant based sour cream for a dairy free version. Add smoked or ground turkey for a protein and flavor boost
Vegan? Use mushrooms, cauliflower or your vegetable of choice. Thicken your chili by smashing a portion of your beans in your pot. This delicious, heart-healthy dish is just what you need on a chilly winter night.
